Tasting Notes: A generous bouquet of berries, smoky oak and earthy characters, by now you will know you have something special in your glass. The full body doesn't disappoint with sweet black cherry fruit and some savoury forest like overtones. The acidity is vibrant without being assertive, a well-balanced wine. One of our best Pinots to date. Cellar for up to 10 years.
Technical details: Cropping Level: 1.8 Ton / Acre Oak Treatment: 50% New French Oak Barrels Alcohol: 13.5 %
Ferment details: Hand harvested fruit was gently crushed, then transferred to open vat frementers, without stems or whole bunches. Wild yeast initiated the fermentation and Guy plunged the fruit cap twice daily to ensure gentle flavour and colour extraction. The wine was then gravity fed to French oak ( 50% new and 50% on year old Troncais and Alliers) for 12 months, blended then bottled in March 2009. The wine was given 12 months bottle age prior to release. ____________________________________________
