2016 North Face Cabernet

TASTING NOTES

A blend of Cabernet Sauvignon, Merlot and a touch of Shiraz, this ten-year-old wine reflects the cool, even 2016 season. Long hang time allowed the fruit to ripen slowly, yielding pure blackcurrant and dark plum on the palate, layered with hints of bay leaf, mocha and subtle leather.  Fine, persistent tannins and bright acidity provide line and length, while a supple texture carries the wine to a long, savoury finish.

Patient cellaring has revealed a wine of depth, power and refinement, now at its peak.

FOOD PAIRING

This full-bodied Cabernet blend calls for food with depth, fat, and a touch of char or umami. Think chargrilled ribeye; venison with a juniper reduction; or a rich mushroom ragu.  It also pairs beautifully with hard cheeses such as aged cheddar, Comté, or Manchego.
