TASTING NOTES
A warm, dry growing season led to an early, compressed harvest in 2025 and smaller, highly concentrated fruit. The resulting wine is generous in style with aromas of ripe nectarine, lemon curd and lime. The palate shows weight and energy, with a gentle yoghurt creaminess, and a fresh and persistent finish.
While enjoyable now, this wine will gain complexity over time, developing notes of roasted hazelnut and honey.
FOOD PAIRING
To complement this cool-climate Chardonnay, look for dishes with layered flavours and a touch of richness. A classic roast chicken with garlic and garden herbs is a natural pairing, as is grilled salmon with a lemon butter sauce.
Vegetarians need not miss out. The wine’s creamy texture and subtle oak pair beautifully with cheese-filled tortellini tossed in a spinach and cream sauce.
HARVEST DATE: Handpicked in the cool of the morning on 15 Feb 2025
WINEMAKING: The fruit was whole-bunch pressed immediately. The juice was chilled on solids in tank for 72 hours and then transferred to barrel for primary fermentation. Partial MLF was undertaken, with regular lees stirring to extract flavours, aromas and creamy texture.
MATURATION: 300L hogsheads (one-third new) for 11 months.
BOTTLING: 21 Jan 2026 with minimal filtration. 90 cases produced.
